A comforting and hearty soup with tender chicken, wild rice, and a creamy broth, cooked to perfection in a slow cooker.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup wild rice, uncooked
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp dried sage
- Salt and pepper to taste
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 2 cups fresh spinach, chopped
Instructions:
Place diced chicken, wild rice, onion, carrots, celery, garlic, chicken broth, thyme, rosemary, sage, salt, and pepper into the slow cooker
Stir to combine and cook on low for 6-8 hours or until chicken is cooked through and rice is tender
In a small bowl, whisk together heavy cream and flour until smooth
Stir the cream mixture into the slow cooker during the last 30 minutes of cooking to thicken the soup
Add fresh spinach and let it wilt before serving
Adjust seasoning if needed
