These Lazy Cat Vegan Bao Buns with Pulled Jackfruit are a delicious and satisfying plant-based alternative to traditional bao buns. The pulled jackfruit is simmered in a flavorful sauce until tender and then stuffed into soft and fluffy bao buns, creating a mouthwatering fusion of textures and flavors.
Ingredients:
- 1 can young green jackfruit in brine, drained and rinsed
- 1 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tsp ground ginger
- 1/2 tsp Chinese five-spice powder
- 1/4 cup vegetable broth
- 1 batch of store-bought vegan bao buns or homemade if preferred
- Fresh cilantro, chopped, for garnish
- Sesame seeds, for garnish
Instructions:
Using your hands, shred the jackfruit into small, stringy pieces
In a pan, heat olive oil over medium heat
Add chopped onion and cook until translucent
Add minced garlic and cook for another minute
Add shredded jackfruit to the pan and saut for 5 minutes
Stir in soy sauce, maple syrup, ground ginger, and Chinese five-spice powder
Add vegetable broth to the pan, reduce heat to low, and simmer for 20-25 minutes until the jackfruit is tender and flavors are absorbed
While the jackfruit is simmering, steam the bao buns according to package instructions until soft and fluffy
Once the jackfruit is done, fill each bao bun with a generous amount of pulled jackfruit
Garnish with chopped cilantro and sesame seeds
