These easy slow cooker chicken burritos are perfect for make-ahead meals. They're packed with flavor and can be customized with your favorite toppings.
Ingredients:
- 3 lbs chicken breasts, boneless and skinless
- 2 cups salsa
- 1 cup chicken broth
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 10 large tortillas
- 2 cups shredded cheese
- 1 can black beans, drained and rinsed
- 1 cup frozen corn kernels
Instructions:
In a slow cooker, combine chicken breasts, salsa, chicken broth, bell pepper, onion, garlic, cumin, chili powder, salt, and pepper
Cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and tender
Shred the chicken using two forks and return it to the slow cooker
Stir in black beans and corn, cook for an additional 30 minutes
To assemble each meal, place a tortilla on a flat surface, spoon some of the chicken mixture onto the center, sprinkle with cheese, and roll up tightly
Wrap each tortilla in foil or plastic wrap and store in the refrigerator for up to 5 days or in the freezer for up to 3 months
To reheat, unwrap the tortilla and microwave for 2-3 minutes or until heated through
