Quick Boston Baked Beans



With a pressure cooker, you can enjoy the rich flavors of Boston Baked Beans in a lot less time. Great for a quick and filling meal!

Ingredients:

  • 2 cups dried navy beans, soaked overnight
  • 1 onion, finely chopped
  • 1/2 cup molasses
  • 1/3 cup brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cloves
  • 4 cups water
  • 4 slices bacon, chopped

Instructions:

Rinse soaked beans and place them in the pressure cooker

Add chopped onions, molasses, brown sugar, ketchup, Dijon mustard, salt, black pepper, ground cloves, and water to the pressure cooker

Stir well to combine the ingredients

Lock the lid of the pressure cooker and set it to high pressure

Cook for 25 minutes, then allow natural pressure release for 10 minutes before manually releasing the remaining pressure

Meanwhile, in a skillet, cook chopped bacon until crispy

Once the pressure cooker is safe to open, stir in the crispy bacon into the beans mixture

Serve hot and enjoy your quick Boston Baked Beans!
