Blueberry Banana Oat Muffins



These Blueberry Banana Oat Muffins are a delicious and wholesome treat, perfect for breakfast or as a snack. The combination of ripe bananas, sweet blueberries, and hearty oats makes them a crowd-pleaser.

Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 ripe bananas, mashed
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions:

Preheat your oven to 350F 175C

In a mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, baking soda, and salt

In another bowl, mix the mashed bananas, melted butter, milk, egg, and vanilla extract until well combined

Add the wet mixture to the dry ingredients and stir until just combined

Do not overmix

Gently fold in the fresh blueberries into the muffin batter

Line a muffin tin with paper liners or grease the muffin cups

Divide the batter evenly among the muffin cups, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean

Remove the muffins from the oven and allow them to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely
